Cheese Curd, Jalapeno

Cheese curds, or "Squeaky Cheese" (its springy texture can squeak against the teeth) are the absolute youngest form of cheese. They are a natural part of the cheese-making process. After the whey separation step, curds are taken out of the cheese vat before being pressed into Cheddar or Colby blocks. Fresh cheese curds can be eaten as a snack, finger food, or an appetizer. They may be served alone, dressed with an additional flavor, or with another food, such as a small smoked sausage or piece of cured pork, skewered together on a toothpick, or breaded and deep-fried. They are popular in Quebec, as part of the dish poutine (made of French fries topped with cheese curds and gravy)!
